  Chinese Spaghetti

Key Ingredients:
Spaghetti, broccoli, carrots, soy sauce, zucchini
    Ingredients:
  • 1 lb. Spaghetti, whole grain
  • 1 Onion, large
  • 1-1/2 tbsp. Garlic, crushed
  • 3-4 Carrots
  • 1 Zucchini Squash, large
  • 1-2 Broccoli stalks
  • 1 Bell/Italian Pepper, red or green
  • 1-2 Tomato (optional)
  • 1 tbsp. Ginger, ground
  • Hot Sauce/Cayenne Pepper (to taste)
  • 1/4 cup Soy Sauce
    Method:
  • Stir fry onions (cut into half rings), garlic, ginger, carrots, zucchini, broccoli and pepper
  • While the veggies are cooking, cook the spaghetti in water until they are soft, around 10-12 minutes
  • When the spaghetti is almost fully cooked, but still a little chewy, drain the water
  • Whisk together the sesame oil, soy , tomato wedges and toss with spaghetti.
  • Toss together the veggies and spaghetti, continue stirring until well combined.
  • When the liquid is absorbed, your dish is ready to serve. Enjoy hot or cold.
