  Pizza Crust Varieties

Key Ingredients: whole wheat, soy flour, cornmeal, black pepper, dry yeast


   Whole Wheat Pizza Crust

    Ingredients:
  • 2 cups whole wheat flour
  • 1 package active dry yeast or instant yeast
  • 3/4 tsp salt
  • 1 cup hot water
  • 1 tbso vegetable oil
  • 1 tbsp honey or sugar
     Method:
  • To prepare pizza dough, stir whole wheat flour; lightly spoon into a measuring cup and level flour.
  • In large mixing bowl, combine whole wheat flour, yeast and salt.
  • Blend in water, oil and honey or sugar. Stir by hand vigorously until all ingredients are well mixed; about 3 minutes.
  • Cover with plastic wrap and let rise to desired size.
  • Place dough in greased 15 x 10 x 1-inch jelly-roll pan or 12 to 14-inch pizza pan. Press dough to cover bottom of pan and up sides to form a rim.
  • Pre-heat oven to 425° F
  • Bake in oven 15 to 20 minutes or until crust is golden brown and toppings are done.

Soy Flour Pizza Crust

     Ingredients:
  • 1 cup soy flour
  • ½ cup neutral-tasting protein powder (I used whey)
  • 1 teaspoon garlic powder
  • 1½ teaspoon oregano or other Italian seasoning
  • pinch pinch black pepper and/or cayenne or other hot pepper
  • ½ teaspoon salt
  • 1-2 teaspoons worth of sugar substitute
  • 3 Tablespoons oil (olive or other)
  • ¼ cup water (approximately)
     Method:
  • Mix dry ingredients together, and add oil, and water. Combine well. The mixture will be sticky, but should hold together. Soy flours differ, so you may need to add a little more water.
  • Spread dough out on well-greased pan or silicone mat. Wet your hands or spatula so you can spread it out smoothly.
  • Heat oven to 375° F
  • Bake for about 10-14 minutes, or until light brown. Remove from oven and cover with pizza toppings. Replace in oven and finish baking
  • Servings: 6 servings of the crust

Cornmeal Pizza Crust

     Ingredients:
  • 1/2 cup warm (not hot!) water
  • 1 1/4 tbsp active dry yeast
  • 1 tbsp sugar
  • 1/4 cup cornmeal
  • 2 3/4 - 3 1/4 cups flour, divided
  • 1 tbsp vegetable oil
  • 1 1/2 tsp salt
     Method:
  • In a medium bowl combine water, yeast, sugar, cornmeal and 1 1/4 cups flour; mix thoroughly. Let rest 5 minutes.
  • Add oil, salt and enough flour to form a ball. Knead, adding flour as needed, about 3 to 5 minutes or until not sticky.
  • Place dough in a sealable bowl or plastic bag sprayed with non-stick spray. Let rest 15 minutes. (This can be refrigerated all day.)
  • Coat pizza pans with cooking spray.
  • Divide dough in half and pat or roll out to fit pizza pans, forming a slight edge on the dough. Prick holes in dough and bake for about 8 minutes. (Dough should be set but not brown.) Top with your favorite ingredients.
  • Preheat oven to 425° F
  • Bake 15 to 20 minutes or until crust is browned.
  • Servings: 2 large 18-inch thin-crust or 2 medium 12-inch thick-crust pizzas
